- 50 جم سكر
- 50 مل خل ابيض
- 25 مل عصير ليمون
- 10 جم بصل بودر
- 110 حم ملح
- 5 جم قرفه
- 10 جم ثوم بودر
- 5 جم شطه بودر
- 5 جم كمون بودر
- 5 جم قرنفل بودر
- 1 جم لون احمرغذائى
طريقة تحضير الكاتشب للشيف حسن
- نحضر الطماطم ونزيل رأسها من الأعلى ونفتحها بالسكين إلى أربع قطع متشابكة.
- نضع الطماطم فى المياء المغلية لمدة دقيقه ونصف وبعد ذلك نخرجها من الوعاء ونضعها على ماء مثلج ونقشرها
- نضع الطماطم فى اناء على النار ونهرسها ونتركها حتى تغلي ثم نضيف إليها ملح وقرفه وثوم وشطه وكمون وقرنفل وقرفه وسكر وخل وعصير ليمون وبصل وثوم بودر، ثم نتركها تغلى ساعه على النار ونخرجها لكي تبرد
- نضرب الصلصه فى الخلاط لفترة معينة حتى يصبح عصير الصلصة سميكًا ثم نضع الخليط على النار في وعاء ونتركه حتى يغلي.
- بعد الغليان لفترة معينة نضع الكاتشب فى برطمان بعدما يبرد و نحتفظ به فى الثلاجه، وهنا يصبح الكاتشب جاهز للاستعمال ووضعه على طاوله الطعام.

في البداية قم بتقطيع الطماطم إلى نصفين واستخرج منها البذور عن طريق العصر الخفيف، ثم أحضري إناء وضعي فيها الطماطم واتركيها على النار، وبعد أن تصل إلى مرحلة النضج أزيليها من على النار واتركيها حتى تبرد.
_ثم قومي بخلطها في الخلاط الكهربائي، وقومي بتصفيتها تمامًا.
_بعد أن نقوم بتصفيتها نضع عليها الخل والملح والسكر والفلفل الأبيض ونتركهم على النار.
_قلب المزيج كل فترة، وبعد أن نحصل على القوام المطلوب نزيلها من على النار.
_بعد أن نزيله من على النار نتركه حتى يبرد، ثم نضعه في زجاجات وندخله الثلاجة سوف تلاحظي أنه اكتسب القوام المطلوب.
_للحصول على لون الكاتشب الأصلي أضيفي إلى الخليط ملعقة صغيرة من البابريكا إلى المزيج، وحبة صغيرة من الفلفل الحار قبل وضع الطماطم على النار، وسوف تحصلين على قوام الكاتشب المطلوب.
