سلطة الراهب هي من الأكلات الشعبية العربية المميزة وتختلف طريقة تحضيرها وإعدادها على حسب البلد وتقاليدها، وسلطة الراهب هي عبارة عن سلطة بابا غنوج وسميت باسم سلطة الراهب أو باذنجان الراهب نسبة إلى راهب كبير كان يدعى غنوج وكان يتميز البابا غنوج بحسن سلوكه وسيرته الطيبة بين الناس، وكان الناس دومًا حريصين على إرسال الهدايا إلى الراهب غنوج دومًا وذلك من أجل تقديرهم لهذا الراهب، وفي يوم من الأيام قام احد طلاب الراهب غنوج بإرسال له طبق طعام تم تحضيره من الباذنجان المشوي لكن الراهب رفض أن يقوم بتناول هذا الطبق الذي أرسله له احد طلابه كهدية له، وقام بالإرسال إلى جميع الطلاب من أجل أن يتناولوا معه هذا الطبق المعد من الباذنجان المشوي وحينها قام أهل القرية بإطلاق اسم بابا غنوج على هذا الطبق تقديرًا لكرم الراهب.

إن تحضير سلطة البابا غنوج أمر سهل وبسيط فضلاً عن القيمة الغذائية التي يقدمها ذلك الطبق المميز والشهي، وتقدم الشيف سالي فؤاد سلطة الراهب بطريقة صحية ومميزة ومكونات طبق سلطة الراهب كالآتي:
- حبة واحدة من الباذنجان كبيرة الحجم ومشوية ومهروسة.
- كوب من الفلفل الأخضر والملون مقطع إلى مكعبات.
- كوب واحد من الطماطم مقطعة مكعبات.
- نصف كوب ن البصل الأخضر المقطع قطع صغيرة.
مكونات صوص سلطة الراهب
- ملعقة صغيرة من الثوم مفروم ناعم.
- نصف ملعقة كبيرة من زيت الزيتون.
- نصف ملعقة كبيرة من دبس الرمان.
- ملعقة كبيرة من عصير الليمون الحامض.
- ملح وفلفل أسود حسب الذوق والرغبة.
طريقة تحضير سلطة الراهب
- نقوم أولاً بخلط مكونات الصوص معًا بطريقة جيدة حتى تمتزج المكونات.
- نقوم بإضافة الفلفل الأخضر والفلفل الألوان والطماطم المقطعة مكعبات إلى صوص سلطة الراهب مع التقليب جيدًا.
- نقوم بإضافة الباذنجان المشوي إلى المكونات والتقليب.
- نقدم سلطة بابا غنوج بجانب المشويات كاللحوم المشوية والدجاج المشوي والسمك المشوي.
- يمكن زيادة كمية دبس الرمان أو تقليلها حسب الرغبة والذوق.
