مكونات الكبدة الإسكندراني للشيف حسن
نصف كيلو جرام من الكبدة الشمبري.
أربعة فصوص ثوم متوسطة الحجم.
ثلاث ملاعق صغيرة من الكمون البودر.
ملعقتان صغيرتان من الكزبرة الناشفة.
ملعقتان صغيرتان من الملح.
ملعقة واحدة صغيرة من الشطة.
ثلاث حبات من الفلفل الأخضر الحامي.
ربع كأس من الزيت النباتي.
عصير ثلاث حبات من عصير الليمون.
طريقة تحضير الكبدة الإسكندراني للشيف حسن
في البداية نقوم بتقطيع الكبدة إلى شرائع أو مكعبات على حسب الرغبة.
أحضري وعاء وضعي فيه فصوص الثوم والكمون والكزبرة الناشفة والملح والشطة والفلفل الحامي، أو البارد على حسب الرغبة.
الخليط السابق نضعه في الخلاط الكهربائي، ثم نضربهم بشكل جيد حتى تمتزج المكونات جميعها.
في وعاء آخر عميق نضيف شرائح الكبدة.
ثم نضع خليط الثوم السابق ثم نحرك الخليط بشكل جيد ونتركه في مكان جانبي لمدة ربع ساعة.
نضيف ربع كأس من الزيت النباتي إلى مقلاة ثم نضعها على النار الساخنة ونترك الزيت حتى يسخن.
ثم نضع خليط الكبدة بشكل تدريجي ونتركها حتى يتغير لونها إلى اللون الداكن.
قومي بعصر ثلاث حبات من عصير الليمون.
نحرك الخليط ونتركه على النار المتوسطة لمدة ربع ساعة حتى تمام النضج.
نرفع الكبدة من على النار ثم نضعها فى سندوتشات للتقديم، أو قدميها مع الأرز أو المكرونة.
