الخبيزة كما أشرنا هي من الأكلات الشعبية التي تحظى بانتشار واسع، وفي البداية يجب أن نتعرف على مكونات الخبيزة والتي تتكون من:
مكونات الخبيزة التقليدية للست غالية
2 حزمة من الخبيزة، أي حوالي نصف كيلو خبيزة طازجة.
حزمة واحدة من السلق.
حزمة من الشبت.
حزمة واحدة من الكزبرة الخضراء.
نص لتر من شوربة اللحم أو المرق.
ربع كوب من الأرز.
عدد 2 بصلة كبيرة الحجم.
4 ملاعق كبيرة من السمن البلدي.
رأس واحدة من الثوم المدقوق.

كيفية التحضير الخبيزة للست غالية
سنتعرف في السطور التالية على طريقة عمل الخبيزة الست غالية:
بعد شراء الخبيزة يجب عليكي أن تقومي بتنظيفها بشكل جيد وقومي بتقطيفها حتى يتم التخلص من العيدان الكبيرة ويصبح معكي الأوراق فقط.
نقوم بنقع الخبيزة في وعاء كبير بداخله ماء وملعقة من الخل ونتركه حوالي ربع ساعة فقط.
بعد أن تقومي بنقع الخبيزة نقوم بشطف الخبيزة مرة أخرى من الخل حتى نتأكد أنها أصبحت نظيفة.
كرري هذه الخطوة مع جميع الخضروات من السلق والشبت والكزبرة واغسليهم جيدًا.
نضع كمية من الماء في وعاء على النار واتركيه حتى يغلي وبعد ذلك ضعي الخبيزة والكسبرة واتركيهم حتى تسلق جيدًا.
نرفع الخبيزة من المياه الساخن ونضعها في طبق به ماء بارد ونتركها في مصفاة حتى تبرد تمامًا.
ضعي الخبيزة مع الكزبرة والشوربة أو المرق في الخلاط الكهربائي واضربيهم جيدًا.
في وعاء على النار نضع خليط الخبيزة والأرز المغسول أو المطهو مسبقًا ونتركهم سويًا حتى تنضج تمامًا.
بعد أن انتهينا من تحضير الخبيزة جاء وقت تحضير “الطشة”، وذلك من خلال وضع كمية من السمن مع الثوم المفروم والملح والفلفل الأسود ونقلبهم حتى يصبح لون الثوم ذهبي ومن ثم نضعها على وجه الخبيزة، الآن الخبيزة أصبحت جاهزة لكي يتم تقديمها.
مكونات الخبيزة باللحم
نصف كيلو من الخبيزة، يفضل أن تكون طازجة.
صلصة طماطم.
كوب واحد من الفريك الصعيدي المنقوع في الماء.
كيلو من اللحم البتلو المقطع إلى قطع صغيرة.
2 كوب من الشوربة.
مكعب واحد من المرقة.
ملح حسب الرغبة.
فلفل أسود.
ربع ملعقة كزبرة ناشفة.
طريقة تحضير الخبيزة باللحمة
قومي بتنظيف أوراق الخبيزة جيدًا وقومي بنقعها في الماء والخل واشطفيها جيدًا.
نترك الخبيزة في مصفاة حتى تتخلص من المياه.
نضع الشوربة في وعاء على نار متوسطة ونتركها على النار حتى تغلي تمامًا ثم نقوم بوضع أوراق الخبيزة والفريك ونتركهم حتى يتم الغليان تمامًا.
بعد التأكد من نضج الفريك تمامًا نقوم بوضع اللحم وصلصة الطماطم ونقلبهم ونتركهم حتى يمزج الخليط تمامًا.
بعد التأكد من نضج اللحم والفريك والخبيزة نقوم بتقديمها بجانب أرز أبيض أو خبز بلدي.

في البداية يجب أن نتعرف على مكونات الخبيزة على طريقة نجلاء الشرباشي:
بعد أن تعرفنا على المكونات حان وقت معرفة طريقة التحضير:
طريقة تحضير الخبيزة للشيف نجلاء الشرباشي
في البداية قومي بتقطيع الخبيزة واخلطيها جيدًا مع أوراق الكزبرة، والشبت والسلق، ثم اسلقيها في المرقة على النار.
قومي بضرب خليط الخبيزة في الكبة قليلًا، وضعيها في حلة على النار مرة أخرى.
قومي بسلق الأرز في الماء، وأضيفي خليط الأرز إلى ماء السلق وقلبي الخليط جيدًا.
قومي بتشويح البصل في السمنة على النار، مع الملح والفلفل الأسود.
أضيفي إلى الخليط الثوم والكزبرة الجافة، ثم أضيفيهم إلى الخبيزة ثم قدميها بألف هناء وشفاء.
