وصفة الكبدة الاسكندراني مشهورة في جميع أنحاء مصر، إنها وصفة سريعة وسهلة يستغرق تحضيرها أقل من 30 دقيقة فقط، قد يكون أصعب خطوة في تحضيرها هي تقطيع الكبد إلى قطع صغيرة، ولكن يمكن تقطيعها وهي مجمدة ثم تركها لتذوب، وإليكم طريقة عمل الكبدة الاسكندراني للشيف نجلاء الشرشابي:

المقادير :

  1. كبدة بقري.
  2. فلفل رومي.
  3. فلفل حار (حسب الاختيار).
  4. 2 معلقة كبيرة ثوم مفروم.
  5. كمون.
  6. ملح وفلفل.
  7. 2 معلقة خل.
  8. 2 معلقة عصير ليمون.
  9. زيت نباتي.

  1. في البداية نقوم بوضع مقدار معين من الزيت (حسب كمية الكبدة) في مقلاة الطهي على نار متوسطة الحرارة.
  2. بعد الانتهاء من تسخين الزيت، نقوم بوضع شرائح الكبدة ونقلبها لمدة 5 دقائق وذلك حتى يتم تغير لونها وتصبح مشوحه.
  3. نقوم بنقل المقلاة على نار أخرى منخفضة الحرارة لكي تحصل على درجة النضج التي نريدها، ونتركها على النار لمدة عشر دقائق أو ربع ساعة حتى تظهر ناضجة ومستوية بشكل تام.
  4. نضيف الملح والفلفل الأسود وعصير الليمون والكمون إلى الكبدة بعدما نتأكد من استوائها تمامًا.
  5.  نقوم بتقليب المكونات السابقة مع بعضها جيدًا حتى تتسبك في بعضها، لمدة دقيقتين.
  6. نضيف إليهم الخل الأبيض ونستمر التقليب.
  7. بعد ذلك نضيف إلي المكونات السابقة الثوم المفروم والفلفل الحار والفلفل الرومي، ونقلب هذه المكونات مع بعضها لمدة لا تقل عن 3 دقائق من التقليب حتى يذبل الفلفل.
  8. أخيرًا.. نقوم برفع الكبدة من على النار وهنا تكون جاهزة للأكل.
