تعد وجبة الطحال الشهية من الأكلات الشهيرة في الوطن العربي لمذاقها اللذيذ والرائع، فكثيرا ما تبحث السيدات عن طريقة عمل الطحال المشوي والمحشي على شبكة الأنترنت للوصول إلى أسهل طريقة، لأنه يتميز بفوائد صحية للجسم من بينها تعزيز صحة الجهاز المناعي وتزويد الجسم بالفيتامينات اللازمة ويجدد الطاقة والنشاط، كما تتنوع طرق عمل الطحال فمنه المحشي والمشوي وسوف نتعرف عن هذه الطرق بالتفصيل.

طريقة تنظيف الطحال
- انقعي الطحال في المياه، وابدأي في تنظيفه.
- انزعي طبقة الجلد البيضاء الرقيقة بيديكي حتى لا يقطع.
- انزعي كل الدهون من حوله مع الجلد، وتأكدي أن المتبقي اللحم فقط.
- انقعي الطحال في المياه، واعصري عليه الليمون لبضع دقائق ثم اشطفيه بالمياة النظيفة.
- اتركي الطحال بحجمه الكامل.
- سويه على النار وقطعيه بعد ذلك.
طريقة عمل الطحال
- افتحي كل قطعة من الطحال بطرف السطين من الوسط.
- ضعي كمية من الزيت في قدر على النار.
- ضعي الطحال وعيدان القرفة وحبات الهيل وورق الغار والبصل المقطع.
- غطي القدر واتركيه على النار حتى يصل إلى النضج.
- صفيه من الماء.
- ضعي البقدونس المفروم مع الشطة والملح والبهارات والفلفل الأسود وزيت الزيتون في إناء.
- اخلطي كل هذه المكونات جيدا
- قومي بحشو الطحال.
- ضعي قطع الطحال في صينية وضعي على الوجه باقي الحشوة.
- ضيفي نص كوب من الماء وغلفي الصينية بورق القصدير وضعيها على النار لفترة قليلة.
- انزعي ورق القصدير وادخلي الصينية الفرن
- اتركيها حتى يحمر الطحال.
- اخرجي الصينية من الفرن وضعي الطحال على أطباق التقديم.
- رشي البقدونس المفروم وضعي الخبز والسلطة.
طريقة عمل الفشة والطحال للشيف الشربيني
مقادير الفشة والطحال للشيف الشربيني
- نصف كيلو من الطحال.
- نصف كيلو من الفشة.
- حبة واحدة بصل.
- 3 فصوص من الثوم.
- نصف ملعقة فلفل أسود.
- نص كأس من الخل.
- رشة ملح.
- ملعقة من الزيت أو السمن.
- ملعقة من الكزبرة الخضراء.
- حبة فلفل أخضر.
- حبة فلفل حار.
طريقة تحضير الفشة والطحال للشيف الشربيني
- اخلطي كمية من الثوم والخل والماء والفلفل الأسود وضعيهم على النار مع إضافة الطحال معهم.
- اخلطي المكونات السابقة وضيفي لهم الفشة وضعيهم على النار حتى ينضجوا.
- اتركيهم حتى يبردوا تماما.
- قسميهم إلى شرائح رفيعة.
- أضيفي ملعقة من السمن في المقلاة وضعيها على النار وضعي شرائح الطحال مع الفشة.
- أضيفي لهم الفلفل الأخضر مع الحار والملح والفلفل والكزبرة والثوم.
- حركيهم جيدا حتى النضج.
- ضعي ملعقة من الكزبرة الخضراء وحركي الخليط، ثم ارفعي الخليط من على النار.
- قدميها شرائح الطحال والفشة ساخنة.
طريقه عمل التقاطيع
التقاطيع عبارة عن مايحتويه العجل من فشه لرئتين أو الرئتين والقلب والقصبه الهوائيه الزور والطحال والكلاوي
الطريقة:
- غسل كل جزء على حده.
- انقعيهم قليلا مع الخل.
- اغلي الماء في إناء وضعي فيها الفشة واتركيها تغلي لمدة دقيقة.
- ارفعيها من الإناء واتركيها حتى تبرد.
- قشري القشرة الشفافة واغسليها بالماء وصفيها بالمصفاه، وقطعيها قطع صغيرة.
- قطعي الكلاوي قطع صغيرة واغسلها جيدا بالماء والخل والملح وانقعيها قليلا في الماء ثم اغسليها وصفيها بالمصفاه.
- اهرسي الثوم وشوحيه في الزيت أو السمن وضعي فيه كل التقاطيع وقلبيهم حتى يتغير لونهم.
- ضعي عليهم قطع الطماطم والفلفل والزعتر والنعناع وكل ذلك حسب المزاج والرغبة.
- استمري في التقليب وضعي نصف كوب من الماء عليها واتركيها على نار هادئة وغطيها.
- عندما تتشرب المياه اعصري عليها ليمونة وملعقة من الخل.
- قدميها بحشوها مع الخبز بأنواعه.
طريقة عمل الطحال بالبصل والفلفل
المكونات:
- 200 جرام من الطحال.
- 2 بصلة متوسطة الحجم.
- 6 ورقات من الكاري.
- ملعقة من مسحوق الفلفل الحار.
- ملعقة من الكزبرة.
- ملعقة من الزنجبيل والثوم والفلفل الأخضر.
- حبتان قرنفل.
- 2 عود قرفة.
- رشة من الملح.
- 2 ملعقة من الزيت.
طريقة التحضير:
- اطحني معجون الزنجبيل مع الفلفل الأخضر والثوم والقرفة والقرنفل حتى تحصلى على معجون ناعم.
- سخنى المقلاه على النار وضعي الزيت والكاري وقلبيها.
- أضيفي معجون التوابل السابق مع التقليب.
- أضيفي البصل المفروم للمقلاه وقلبيه حتى يتحمر.
- أضيفي الطحال للخليط وغطي المقلاة واتركيها على النار لمدة 7 دقائق.
- ارفعي الغطاء من على المقلاة وأضيفي الكركم، والفلفل الحار والملح والكزبرة وقلبي جيدا.
- غطي المقلاه واتركيها على النار لمدة 10 دقائق حتى تتحمر.
طريقة عمل الطحال والكلاوى
- اغسلي الطحال جيدا كما في الطرق السابقة.
- الكلاوي تقطع وتغسل جيدا بالخل والملح دون أن تسلق.
- تنقع الكلاوي قليلا وتصفى من الماء كالطحال.
- نضيف البصل والثوم على النار حتى يحمر.
- نتركهم على النار حتى تصفى الماء ويتشرب السائل.
طريقة عمل الطحال المحشي في المنزل
الطحال من الأكلات الشعبية التي يقع في حبها الكثير من الأشخاص سواء الرجال أو السيدات، وحتى تتمكني من تحضيرها بطريقة سهلة قومي بإحضار المكونات التالية، وطريقة التحضير:
مكونات الطحال المحشي في المنزل
- 2 بصل شرائح
- 2 فص مستكة
- 2 معلقة كبيرة زبدة
- 2 حبهان
- 1 طحال
- 1 معلقة صغيرة ملح أو حسب الرغبة
- 1 بصلة مفرومة
- 1 معلقة صغيرة بهارات
- 1 معلقة صغيرة بابريكا
- 1 كوب أرز عادى
- ½ معلقة صغيرة فلفل اسود مطحون أو حسب الرغبة
- ½ كوب بقدونس طازج
- ¼ كيلو كبدة مقطعة صغير
طريقة تحضير الطحال المحشي في المنزل
- في البداية قومي بغسل الطحال جيدًا بالمياه، ثم قومي بتصفيته.
- ثم قومي بخلط البصل مع الملح، وكافة البهارات والزبدة والكبدة والأرز والبقدونس.
- ضعي المقلاة على النار وضعي بها الزبد، ثم أضيفي خلطة الحشو لتشويحها جيدًا.
- يشق الحطال من الجزء العلوى ويحشى بالخليط السابق.
- ثم خياطة الطحال بالإبرة والخيط.
- ضعي الطحال المحشي في فى وعاء به ماء مغلى ومضاف إلية مسكتة وحبهان حتى يغلي.
- قومي بتصفية الطحال من الماء، ثم تجفيفه جيدًا
- أحضري إناء وضعيه على النار ثم أضيفي ملعقة من السمن، ونتركها حتى تسخن جيدًا، ثم نقوم بتحمير الطحال من كافة الجوانب.
