مقادير قلي الطعمية بزيت أقل
ربع كوب حمص، منقوع ليلة
ربع رغيف خبز، يابس ما يعادل ربع كوب منقوع بماء
1 فص ثوم كبير
ربع ملعقة صغيره كمون
ربع ملعقة صغيرة فلفل أسود
ربع ملعقة صغيرة شمر
بقدونس
ربع ملعقة صغيره بيكاربونات الصودا
ربع ملعقة صغيره ملح
طريقة التحضير:
قومي أولًا بفرم الثوم حتى يصبح الثوم ناعمًا.
ثم قومي بإضافة البقدونس واخلطيه مع الثوم حتى يصبح ناعمًا.
باقي المكونات يتم وضعها وخلطها جيدًا لمدة ثوان، حتى يحصل التجانس تمامًا للخليط، ثم بعد ذلك يضاف للخليط الحمص، ثم يتم جميع المكونات جميعًا حتى نحصل على عجينة الفلافل الرائعة.
قومي بتشكيل العجينة إلى أقراص حسب رغبتك، مع وضع القليل من الزيت في المقلاة، ثم قومي بتوزيع أقراص الفلافل في المقلاة وتغطيتها لبعض الوقت.
في النهاية قومي بتقليب أقراص العجينة على الوجه الآخر، واحرصي على ابقاء المقلاة مغطاة تمامًا، واتركي أقراص الطعمية في المقلاة حتى تصبح كما لو كانت مقرمشة، وحتى تتأكدي من نضج الفلافل وأنها أصبحت جاهزة للتقديم والأكل قومي بكسر أحد الأقراص إلى نصفين وتذوقي منتصف القرص.

مكونات الطعمية دايت سالي فؤاد
¼ كيلو فول مدشوش او أقل ( منقوع في الماء مدة 8 ساعات )
حزمتين كسبرة
حزمتين بقدونس
حزمتين بصل اخضر او كرات
1 ملعقة صغيرة بيكنج صودا
1 او 2 بيضة
2 ملعقة كبيرة كسبرة ناشفة مطحونة
ملح وفلفل
للوجه: كسبرة ناشفة او سمسم
4 رأس ثوم مقشرة
بصلة مفرومة

قومي بخلط جميع المكونات التي ذكرناها سابقًا في محضرة الطعام، مع إضافة البيض للخليط حتى لا يكون الخليط مائل للسيولة.
إذا كانت العجينة متماسكة يمكن تشكيلها على حسب الرغبة باليد، مع مراعاة دهن اليد بالزيت حتى تسهل عملية التشكيل، ولأن رائحتها لا تزول من اليد بسرعة يراعى ارتداء الجاونتي.
بعد تشكيلها قومي برص الطعمية على صينية الفرن المبطنة بدقيق شوفان، وضعي السمس أو الكزبرة عليها.
ثم قومي بإدخالها في الفرن على درجة حرارة 200 واتركيها في الفرن حتى يصبح لونها مائل للون الذهبي، ومن الممكن أن تتذوقيها حتى تتأكدي من نضجها.
_ وتعد هذه الطريقة كما أشارت إلى ذلك الشيف سالي فؤاد، مثالية ولا تحتوي على كميات كبيرة من السعرات الحرارية، ويمكن لأصحاب الدايت اتباعها.
ولامتصاص بعض الفيتامينات من الممكن إضافة الزيت داخل العجينة، وإذا لاحظتي انتفاخ الطعمية في الفرن فهذا نتيجة لوجود البيكنج صودا.
فلافل مشوية للدايت
مقادير فلافل مشوية للرجيم
– 3 اكواب من الحمص منقوع ليلة كاملة.
-حبة بصل متوسطة الحجم مقسمة إلى أربعة أرباع.
– ربع كوب من الكزبرة الطازجة.
– ربع كوب بقدونس
– ملعقة صغيرة من البهارات
– ملعقة صغيرة من الكمون
– ربع ملعقة صغيرة من البيكنج بودر
– ربع ملعقة صغيرة من البيكنج صودا

طريقة تحضير فلافل مشوية للدايت
ضعي الحمص، البصل، البقدونس والكزبرة، في طبق التحضير وقومي بطحنهم جيدًا حتى يتم التجانس.
أضيفي الملح، الكمون، البهارات، البيكنغ باودر والبيكنغ صودا، واطحني المزيج جيدً حتى يتم التماسك.
قومي بتشكيل العجينة إلى كرات أو على حسب رغبتك المفضلة وضعيها في الفرن.
أدخلي الصينية إلى الفرن على حرارة 180 درجة مئوية، لمدة 5 دقائق حتى يصبح يتغير لون الفلافل إلى اللون الذهبي الرائع.
في النهاية قومي بإخراج الفلافل من الفرن، وقدميها ساخنة.
